Pineapple Upside-Down Cake
My favourite birthday cake, baked from scratch: caramelly sweet and toasty warm. This is my dad's version, as he sent it.
My favourite birthday cake is a homemade pineapple upside-down cake, caramelly sweet and toasty warm. My dad made one, and this is his recipe, in his email:
Hi Guys,
Here's the closest we could come to making an upside down cake like I told her our Mom used to make. Well, Pam, by principle, tries never to follow a recipe, so this one is made of:
1. Cup and a half of pure home ground barley flour.
2. Can of pineapple rounds
3. All the juice from the pineapple can
4. A few green(!) eggs from our Ameraucana hens (no other liquid besides step #2 and #3)
5. Organic demerara brown sugarAnd in the centers of the rounds: a few craisins (dried organic cranberries), a couple of pecans.
There is a picture of Viola on our fridge, perhaps looking down and wondering what has Canuck-ada brought forth. Cryptocat is looking at it, wondering too. But I can assure you all, it was fabulous!
