Spinach Caesar

My favourite salad. Fresh-plucked spinach with a dressing of mustard powder, egg yolk, anchovies, red wine vinegar, olive oil, salt, lemon and sesame, with croutons, blue cheese and bacon on top if you like. It's basically absurd.

The dressing carries it.

Dressing

• olive oil
• red wine vinegar
• egg yolk
• anchovies
• garlic, plenty
• lemon juice
• yellow mustard powder
• Himalayan salt and pepper
• sesame

Whisk or blend until it emulsifies. On a spoon it should taste a little too strong; the leaves calm it down.

The salad

• fresh-plucked spinach
• croutons
• blue cheese, crumbled
• bacon, crumbled

Spinach stands up to a dressing this heavy. The blue cheese on top of the anchovy and garlic turns it into a meal.
